I can set app sounds for admin users in the settings of the Batterydoorbell, however those menus are not available for Guest users. How can a guest user set his app sounds?

That is indeed what I found out: only the admin can change the sound for the app on his own phone. The sound for the app on the guest/family phone can can not be changed.
I suggest to update the app so the guest/family account can change its own sounds.
(bypass is now to give the family members all admin rights, although that is way too much power)
